  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (lactose-free or plant-based)
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the apples by peeling and thinly slicing them. Toss with 150 g of sugar and salt; let sit to release juices.
  2. Cook the apples in a skillet over medium heat until softened and slightly caramelized.
  3. For the custard, whisk egg yolks, cornstarch, sugar, and salt together. Gradually add milk while whisking. Cook over low heat until thickened, then stir in vanilla bean paste.
  4. In a baking dish, layer half of the cooked apples followed by half the custard; repeat for remaining ingredients.
  5. Bake at 180°C (350°F) for about 30 minutes until golden.
