  • 3 large eggs
  • 1½ teaspoons vanilla extract

  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel (for sprinkling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
  2. Melt semisweet chocolate and butter in a saucepan over low heat until smooth.
  3. Stir in granulated sugar and light brown sugar until combined. Add eggs one at a time, whisking well after each addition, then mix in vanilla extract.
  4. In another bowl, sift together flour, cocoa powder, and salt. Gradually fold into wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 20–25 minutes until a toothpick comes out with a few moist crumbs.
  6. Cool completely before cutting into small squares for petit fours.
  7. For ganache: Heat heavy cream until simmering; pour over chopped chocolate and let sit for a few minutes before stirring until smooth.
  8. Coat each brownie piece with ganache and sprinkle with fleur de sel before letting set.
