  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until the onion is translucent.
  3. Add ground beef and cook until browned; drain excess fat if necessary.
  4. Stir in sliced zucchini and drained diced tomatoes. Season with Italian seasoning, salt, and pepper; cook for an additional 5 minutes.
  5. Transfer mixture to a greased baking dish. Top evenly with cheddar and mozzarella cheeses.
  6. Bake for 25–30 minutes or until the cheese is bubbling and golden brown.
