  • 5 celery stalks, chopped
  • 1 cup wild rice
  • 3 cups chicken broth
  • 1 lb chicken breasts, cut into small pieces
  • 10 tbsp butter, divided
  • 1 tsp salt
  • ½ tsp poultry seasoning
  • 4 tbsp flour
  • 2 cups milk
  • Optional: 3-4 cups cubed bread

Instructions

  1. Preheat your oven to 350°F (175°C). In a large baking dish, combine chopped onion, carrots, celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  2. Meanwhile, melt 4 tablespoons of butter in a saucepan over medium heat. Stir in flour, salt, and poultry seasoning; cook for about 1 minute until bubbly. Gradually whisk in milk to create a smooth sauce.
  3. If using the topping, melt the remaining butter and toss with cubed bread.
  4. After the initial baking time, remove the foil and add raw chicken pieces along with the creamy sauce to the dish. Stir gently to combine; top with buttery bread cubes if desired.
  5. Increase the oven temperature to 450°F (230°C) and bake uncovered for another 20-30 minutes until the chicken is cooked through and bread cubes are golden brown.
