  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup (133 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer, cream together room temperature butter and sugars until light and fluffy.
  3. Add the egg and vanilla; mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add to the wet mixture until just combined.
  5. Set aside 2 cups of dough. Press remaining dough into an 8×8 baking pan lined with parchment paper.
  6. Bake the crust for about 15 minutes or until slightly golden.
  7. For the cranberry filling, mix cranberries, granulated sugar, cornstarch, orange zest, orange juice, and vanilla in a bowl.
  8. Pour filling over the pre-baked crust and crumble reserved dough on top.
  9. Bake for an additional 45 minutes; cover with foil if browning too quickly.
  10. Allow cooling completely before slicing.
