  • 2 ¼ tsp active dry yeast
  • 1 ¼ cups warm water (105°F–110°F)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil (plus more for brushing)
  • 1 tbsp Italian herb blend
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a bowl; let sit until foamy (5–7 minutes).
  2. Mix in olive oil, salt, and half of the flour. Gradually add remaining flour until a soft dough forms.
  3. Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
  4. Place dough in a greased bowl; cover and let rise in a warm place for 1–1.5 hours until doubled in size.
  5. Punch down the dough; shape into a rectangle and sprinkle with garlic and cheeses.
  6. Roll up dough jelly-roll style; place seam-side down in a greased loaf pan.
  7. Let rise again for 30–40 minutes until puffy; preheat oven to 375°F (190°C).
  8. Brush with olive oil and sprinkle with herbs and additional cheese if desired.
  9. Bake for 25–30 minutes until golden brown and sounds hollow when tapped.
  10. Cool slightly, garnish with parsley, and serve!
