  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, warm the olive oil. Sauté the onion for about 3-4 minutes until softened.
  3. Add ground turkey to the skillet and cook until browned (5-6 minutes). Drain excess fat if necessary.
  4. Stir in garlic, bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper; sauté for another 3-5 minutes.
  5. Transfer the mixture to the prepared baking dish and cover with foil. Bake for about 25 minutes until sweet potatoes are tender.
  6. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is melted.
