  • 1/2 cup unsweetened shredded coconut
  • 5 Medjool Dates, pitted
  • 1/8 tsp salt
  • 3 Tbsp sunflower seed butter
  • 3 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup dark chocolate chips
  • 1 Tbsp sunflower seed butter

Instructions

  1. Prepare the cookie base by blending all base ingredients in a food processor until they clump together.
  2. Shape the dough into cups in a mini silicone muffin pan.
  3. Make the caramel by whisking together sunflower seed butter and maple syrup until smooth.
  4. Fill each cup with 1 teaspoon of caramel.
  5. Melt dark chocolate chips in the microwave, mix in sunflower seed butter, and pour over each cookie cup.
  6. Chill in the fridge for at least 30 minutes to set.
