  • 2 tablespoons butter
  • 1 yellow onion, diced
  • ½ cup carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 ¼ lbs. red potatoes, cubed

Instructions

  1. In a large pot over medium heat, cook and crumble the ground chicken until browned (about 10-12 minutes). Reserve 1 tablespoon of drippings and discard the rest.
  2. Add the reserved drippings and butter to the pot; sauté the onion, carrots, and celery for about 5 minutes until softened.
  3. Stir in garlic; cook for 1 minute. Sprinkle in flour and stir continuously for about 2 minutes.
  4. Gradually pour in chicken broth while scraping up any browned bits at the bottom of the pot until smooth.
  5. Add cubed red potatoes and bring to a simmer; cook uncovered for about 20-25 minutes until potatoes are tender.
  6. Stir in heavy cream along with soy sauce and hot sauce; mix until combined and heated through.
