  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter (113g total; divided into 6 tablespoons and 2 tablespoons)
  • Non-melting sugar or powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C). In a mixing bowl, whisk together flour, baking powder, baking soda, salt, holiday spice mix, and sugar.
  2. Fold in dried fruits and candied peel. Create a well in the center and crack in the egg.
  3. Add buttermilk and melted butter (reserve 2 tablespoons for later) and mix until just combined.
  4. Spoon batter into lined muffin tins and sprinkle with non-melting sugar before baking for about 20 minutes until golden brown.
