  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into 1-inch cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Activate yeast by combining warm water, yeast, and sugar in a bowl; let sit for about 5 minutes until foamy.
  2. Mix flour and salt in another bowl; gradually add to yeast mixture until combined.
  3. Knead dough until smooth (about 5 minutes with a mixer or 8 minutes by hand).
  4. Incorporate rosemary and parmesan; let dough rise in a greased bowl for about an hour.
  5. Preheat oven to 425°F (220°C). Shape dough into pretzels by enclosing mozzarella cubes.
  6. Boil pretzels in water mixed with baking soda for about 30 seconds each; drain on paper towels.
  7. Brush with melted butter and sprinkle with coarse sea salt before baking for 12-15 minutes until golden.
