  • 1 ⅓ cup brown sugar (lightly packed)
  • ½ cup granulated sugar
  • 2 large eggs (or flaxseed meal for vegan option)
  • 1½ tablespoons unsulphured molasses
  • 1½ teaspoons pure vanilla extract
  • 12 tablespoons unsalted butter (softened to cool room temperature)
  • 1½ cups vegan marshmallow creme
  • 2 cups powdered sugar (sifted if lumpy)
  • ¾ teaspoon pure vanilla extract
  • couple pinches salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, mix oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream together softened butter with brown and granulated sugars until fluffy.
  4. Add eggs (or flaxseed mixture), molasses, and vanilla; mix until combined.
  5. Gradually add dry ingredients to wet ingredients; stir gently.
  6. Scoop dough onto prepared sheets and bake for 10 minutes until edges are golden.
  7. Cool cookies completely before frosting: Beat softened butter with vegan marshmallow crème, then mix in powdered sugar, vanilla, and salt.
  8. Spread frosting between two cookie halves to create sandwiches.
