  • 2 sheets frozen puff pastry (thawed)
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 4 sweet onions (thinly sliced)
  • 2 cups freshly grated mozzarella cheese
  • Fresh sage leaves (for garnish)
  • Salt and black pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface, place on parchment-lined baking sheets, score a 1-inch border, and prick the center with a fork.
  2. In a skillet over medium-low heat, caramelize sliced onions with salt and pepper for about 25–30 minutes until golden. Add apple cider in the last 5 minutes.
  3. In a bowl, mix ricotta cheese and pumpkin purée with salt and pepper. Spread on prepared pastry.
  4. Top with caramelized onions followed by mozzarella cheese.
  5. Scatter fresh sage leaves on top and brush edges with an egg wash (beaten egg + water).
  6. Bake for 25–30 minutes until golden brown.
