  • 3 cups rolled oats
  • 1/4 cup light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 3/4 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp vanilla extract
  • 1/4 cup vegetable/sunflower oil
  • 1 tbsp maple syrup
  • 1/2 cup pumpkin purée
  • 1/23/4 cup pumpkin seeds, cranberries, pecans, etc.

Instructions

  1. Preheat oven to 160C (325F) and line a baking tray with baking paper.
  2. In a large bowl, mix rolled oats, light brown sugar, spices, and vanilla extract.
  3. Add vegetable oil, maple syrup, and pumpkin purée; mix until combined.
  4. Spread mixture evenly on the prepared baking tray.
  5. Bake for 35-45 minutes, stirring every 15 minutes until golden brown.
  6. Allow to cool completely before storing in an airtight container.
