  • 3/4 cup rolled oats
  • 4 large eggs
  • 1 large egg yolk
  • 1 1/4 cups heavy cream
  • 1 1/4 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • Pinch of ground cloves
  • 1 cup pecans (finely chopped)
  • 1/3 cup packed light brown sugar
  • 2 tablespoons light corn syrup
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coarse sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, cream together the butter and brown sugar until fluffy. Mix in the egg yolk and vanilla extract.
  2. Gradually add flour, oats, and salt until combined. Press into a pie dish to form the crust.
  3. Bake for about 15 minutes until lightly golden.
  4. While the crust bakes, whisk together eggs, heavy cream, whole milk, sugar, and spices until smooth.
  5. Pour the custard mixture into the pre-baked crust and bake for approximately 30 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before slicing.
