  • 1 pound Brussels sprouts (halved)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)
  • 2 teaspoons maple syrup (or honey)
  • 2 teaspoons mustard
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. Trim the ends of the Brussels sprouts, remove any outer leaves, and rinse them thoroughly.
  3. Halve each sprout and place them on the baking sheet. Drizzle with ½ tablespoon of olive oil, sprinkle with salt and pepper, and toss until evenly coated.
  4. Roast in the oven for 20-25 minutes until golden brown and tender.
  5. While the sprouts are roasting, whisk together the remaining olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and pepper in a jar until combined.
