  • 3/4 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup salted butter (for cream filling)
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract (for cream filling)
  • 1 tbsp milk of choice
  • 3 tbsp coconut oil or avocado oil (for salted caramel)
  • 1/4 cup almond butter (for salted caramel)
  • 1/4 cup + 2 tbsp maple syrup (for salted caramel)
  • A pinch of salt (for salted caramel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the oats, flour, baking soda, spices, and salt.
  3. In a separate large bowl, beat the softened butter and brown sugar together until creamy. Mix in the molasses, egg, and vanilla until smooth.
  4. Gently mix the dry ingredients into the wet mixture until just combined.
  5. Using a medium cookie scoop, drop balls of dough onto prepared baking sheets. Bake at 350°F for about 10-12 minutes until the edges turn slightly golden.
  6. For the cream filling, beat the softened butter until light and fluffy. Gradually add powdered sugar while mixing, then add vanilla and milk; mix until well combined.
  7. To make the salted caramel, mix together all ingredients in a bowl and adjust consistency by adding more maple syrup if desired.
  8. Take half of the cooled cookies and pipe or spread cream filling around their edges. Add about one teaspoon of caramel in the center before topping with another cookie.
