  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. 1. Heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted. Remove from heat and let cool slightly before mixing in feta, cream cheese, lemon zest, lemon juice, dill, salt, and pepper.
  2. 2. On a clean surface, lay out the salmon fillet and spread the spinach-feta mixture evenly on top. Carefully roll the salmon tightly from one end and secure it with toothpicks or kitchen twine.
  3. 3. Preheat oven to 375°F (190°C). Place the salmon roll seam-side down on a lined baking sheet and bake for about 18 minutes until cooked through.
