  • 4 pounds sweet potato
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 1.5 teaspoons ground cinnamon
  • 0.25 cup heavy cream
  • 0.5 cup flour
  • 0.25 cup brown sugar
  • 1 cup chopped pecans (divided)
  • 0.5 cup maple syrup
  • 8 tablespoons cold butter (divided)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with aluminum foil.
  2. Wash sweet potatoes and cut slits into each one. Bake for 1 to 1.5 hours until tender.
  3. Once cooled, reduce oven temperature to 350°F.
  4. Scoop out sweet potato flesh into a bowl and mash until desired consistency.
  5. Mix in maple syrup, vanilla extract, melted butter, cinnamon, and heavy cream until well combined.
  6. Transfer mixture to a baking dish and level it out.
  7. For the topping, mix flour, brown sugar, half of the pecans, and cold butter until crumbly.
  8. Sprinkle topping over sweet potato mixture and bake for about 30 minutes or until golden brown.
