  • 1 packet taco seasoning
  • 1 can black beans (15 oz)

  • 1 cup diced tomatoes

  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse rice under cold water until clear. In a pot, combine rice and boiled water or broth. Cover and simmer for 18-20 minutes until tender.
