  • ½ pound turkey strips
  • 3 medium shallots
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear
  • 1 lemon
  • ½ cup parsley
  • Freshly ground black pepper

Instructions

  1. Peel, slice, and dice the pear. Toss with lemon juice to prevent browning and set aside.
  2. Heat a skillet over medium heat. Cook turkey strips until golden brown; remove and keep some fat in the pan.
  3. Sauté sliced shallots in the remaining fat for about a minute; then stir in Dijon mustard.
  4. Add frozen peas and diced pears; cook for about five minutes until heated through.
  5. Stir in half of the turkey strips along with chopped parsley and black pepper.
  6. Serve in a large bowl, topped with remaining turkey strips and lemon zest.
