  • 5 ounces whole wheat French bread (cut into small cubes)
  • 2 tablespoons dried cranberries (chopped)
  • 3/4 cup chicken broth
  • 4 fresh sage leaves (minced)
  • 1/2 medium onion (minced)
  • 1 large stalk celery (minced)
  • 1 large beaten egg
  • 1/2 tablespoon butter
  • 11/4 teaspoon kosher salt
  • 6 to 8 pieces cooking twine
  • 1 teaspoon salted butter (softened)
  • 2 cups chicken broth (for gravy)
  • 2 leaves fresh sage (for gravy)
  • 3/4 teaspoon poultry seasoning (for gravy)
  • 1/4 cup all-purpose flour (for gravy)
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the turkey breast skin-side down on a clean surface and flatten slightly.
  2. In a skillet, melt butter and sauté onion and celery until soft. Add sage, parsley, poultry seasoning, salt, pepper, bread cubes, cranberries, chicken broth, and egg; mix well.
  3. Spread stuffing over the turkey breast evenly and roll tightly. Secure with cooking twine.
  4. Place seam-side down on a baking sheet; rub with softened butter and season with salt and pepper. Roast for about 1 hour or until internal temperature reaches 165°F (74°C).
  5. For gravy: Whisk flour into warmed chicken broth until thickened; season to taste.
