  • 1 vegan pie crust (9-10”)
  • 2 cups cooked vegan chick’n pieces
  • 2 medium carrots
  • 1/2 cup sliced celery
  • 1/2 onion
  • 1 teaspoon minced garlic
  • 6 tablespoons vegan butter
  • 1/3 cup all-purpose flour
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1.5 cups vegan vegetable broth
  • 1 cup frozen peas
  • 2/3 cup vegan heavy cream
  • 23 cups vegan stuffing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt the vegan butter and sauté onions and garlic until translucent.
  3. Add carrots and celery; cook until slightly softened.
  4. Sprinkle flour over veggies, stir well, then gradually whisk in vegetable broth until smooth.
  5. Season with salt, pepper, thyme; add chick’n pieces, peas, and vegan cream. Stir until thickened.
  6. Pour filling into the pie crust and top with stuffing.
  7. Bake for about 40 minutes or until golden brown on top. Let cool slightly before serving.
